What does it mean to get a "prime" steak, after all they are acknowledged to be the best steaks? “Prime” means that the steak has received the highest quality rating from the USDA. This covers a number of aspects: flavor, juiciness, and tenderness. The designation of “Prime” is determined by a number of factors: age of the beef; marbling of the beef (with abundant marbling being required). Prime beef covers only 1%-2% of all beef, so you know you’re getting the best when it carries the “Prime” label. All of the recommended steak houses in our guide offer only “prime” steaks.
Chicago Best Steaks uses a number of measures to define the restaurant that offer the best steaks. First, the steak house must feature USDA Prime Beef on its menu; the steak house must also offer world-class service; and, stock an extensive supply of wines and spirits, in keeping with the enjoyment and atmosphere that are part and parcel of a great steak house.
Each of the steakhouses included on this site and in our guide is highly regarded by local and national media outlets such as Chicago Tribune, Chicago Sun-Times DiRoNA, Wine Spectator and Zagat.
