What does it mean to get a "prime" steak, after all they are acknowledged to be the best steaks? “Prime” means that the steak has received the highest quality rating from the USDA. This covers a number of aspects: flavor, juiciness, and tenderness. The designation of “Prime” is determined by a number of factors: age of the beef; marbling of the beef (with abundant marbling being required).
