Their selections span the globe, offering the best varietals from Europe, South America, Oceania, and North America. They even have their own Eddie Merlot’s label out of Napa Valley: chardonnay, cabernet sauvignon, and, of course, merlot.

Eddie Merlot’s gets the meal started with flavor-packed appetizers that prepare your palate for the mouth-watering entrees to come. Eddie’s Smokin’ Shrimp Cocktail is a particularly fun way to kick things off. The classic combination of jumbo shrimp and horseradish cocktail sauce comes served on a cloud of billowing smoke, courtesy of the dry ice keeping the dish deliciously chilled. Ahi tuna wontons are another unique plate, pairing marinated Ahi tuna with crispy wonton chips for a crunchy, refreshing bite.

“Classic” is the name of the game for Eddie Merlot’s soups and salads. Tried and true companions to a juicy steak, the menu offers Caesar, the Merlot Iceberg wedge salad, and a romaine “Waldorf” salad. For soups, you can’t go wrong with the time-tested flavors of the lobster bisque or the French onion soup, made with five types of onions and topped with Gruyere and parmesan cheeses.

The selection of steaks at Eddie Merlot’s will have you spoiled for choice. Aged for 21 days, at a minimum, their prime beef is cut in house to ensure perfection on each plate. Filet mignon comes at a size right for your appetite: 7 ounce, 10 ounce, and a bone-in 16 ounce. The bourbon-marinated prime ribeye steak has an added layer of flavor that is a treat for the taste buds.

The serious steak connoisseurs should turn their eye to the “Premium Cuts” section of the menu. These premiere selections include rare cuts of the highest quality that you’ll be hard-pressed to find on another steakhouse menu. The Wylarah filet mignon rivals the best Kobe beef, earning the highest possible rating for its marbling, an indication of unmatched flavor. The wagyu bone-in New York strip by Greg Norman Signature is exclusively found at Eddie Merlot’s; you won’t find this high marbled, specially chosen cut at any other restaurant.

A great steak can only get better with the right accompaniments, and Eddie Merlot’s has many options to personalize your steak. If you’re feeling saucy, the creamy hollandaise or rich red wine sauce might be the extra touch you need. You can maximize your bite by topping your steak with a fried egg, caramelized onions and mushrooms, or bacon gorgonzola cheese. Surf and turf is never a wrong choice, and you can have your pick of seafood with options like cold water lobster tail, sautéed crab cake, and bacon-wrapped BBQ shrimp.

If you’d like to add something a little extra to your steak but prefer to leave it in the hands of the professionals, the chef has prepared a few dishes that complement the beef with exciting flavors. The trio of medallions provides you with three vibrant preparations – Oscar-style, peppercorn, and bacon gorgonzola. Steak frites, an 8 ounce flat top steak accompanied by fresh-cut fries, is a steakhouse standard that can’t be beat. A little Southern love can be found in the New Orleans mixed grill, a downright party of tastes comprised of a 4 ounce filet mignon, Andouille sausage, grilled shrimp, and garlic mashed potatoes.

End your meal with flair with one of the shared desserts, prepared tableside. The vanilla cognac brownie will win the heart of the chocoholics. The double layer chocolate fudge brownie is flambéed with the cognac and topped with pecans, raspberries, and crème Anglaise. The bananas Foster is a crowd pleaser, a blissful concoction of brown sugar, bananas, butter, dark Jamaican rum, and banana liqueur. It’s a perfect mix of taste and execution that will leave just the right impression at the end of the evening.
